Zastosowanie wycierki do produkcji bioetanolu mogłoby przyczynić się do zwiększenia konkurencyjności przemysłu ziemniaczanego. Niestety jak dotąd nie opracowano efektywnej technologii przeróbki wycierki ziemniaczanej na etanol. Celem niniejszej pracy było określenie efektywności obróbki hydrotermicznej wycierki ziemniaczanej w wytwarzaniu półproduktu do fermentacji etanolowej. Obróbkę hydrotermiczną wycierki prowadzono w trzech różnych temperaturach: 100°C, 117°C oraz 121°C w czasie 1 godziny. Oznaczono wydajność procesu ekstrakcji, zbadano zmiany struktury mikroskopowej wycierki wywołane przeprowadzoną obróbką, określono rozkład mas cząsteczkowych wytworzonego ekstraktu metodą GPC jak również skład tworzących go monomerów, metodą HPLC. Stwierdzono, że obróbka hydrotermiczna powoduje częściową solubilizację i hydrolizę wycierki ziemniaczanej a efektywność tego procesu jest uzależniona jego intensywności, przy czym w temperaturze do 100°C wydajność procesu jest dość niska i nie przekracza 4%, natomiast zastosowanie warunków obróbki hydrotermicznej odpowiadających standardom laboratorium mikrobiologicznego pozwala na zwiększenie wydajności ekstrakcji do 25%. Wyekstrahowany w wyniku obróbki hydrotermicznej materiał składa się z wysokocząsteczkowej frakcji skleikowanej skrobi ziemniaczanej oraz niskocząsteczkowej frakcji będącej złożoną mieszaninę częściowo zhydrolizowanych poliglukanów, hemiceluloz oraz pektyn. Ilość wyekstrahowanej frakcji niskocząsteczkowej wzrasta ze wzrostem intensywności obróbki hydrotermicznej.

The application of potato pulp as a raw material for bioethanol production could give rise to the increase of the competitiveness of potato industry. However, up to now, the appropriate, effective technology is unknown. The aim of the work was the evaluation of the effectiveness of hydrothermal treatment in generating semi-finished product for ethanol fermentation. Hydrothermal pretreatment was investigated at three different temperatures: 100°C, 117°C, and 121°C, for 1 hour. The efficiency of the extraction, changes in the microstructure of potato pulp, molecular mass distribution of the extract, as well as monomer composition were investigated. It was found that hydrothermal treatment causes partial solubilisation and hydrolysis of potato pulp. The effectiveness of the extraction depends on its intensity - at the temperature up to 100°C it is relatively low and does not exceed 4%. Hydrothermal treatment at the temperature typically applied in the microbiological laboratory make possible the increase of extraction efficiency up to 25%. The extracted material consists of two fractions: high molecular mass constituted of gelatinised starch, and of low molecular mass constituted partially of hydrolysed polyglucans, hemicelluloses and pectins. The amount of extracted low molecular mass fraction increases with the increase of the intensity of hydrothermal treatment.
