W pracy badano wpływ moczenia lub przemywania wiórków selera korzeniowego roztworem nadtlenku wodoru (5% lub 10%) na poprawę jakości produktu mało przetworzonego. Oznaczono jakość mikrobiologiczną produktu oraz barwę w systemie CIE L*a*b* i cechy sensoryczne. Na podstawie otrzymanych wyników stwierdzono, że połączenie moczenia wiórków selera w roztworach H2O2 z pakowaniem w atmosferze modyfikowanej wpłynęło istotnie (p = 0,05) na poprawę cech sensorycznych i jakości mikrobiologicznej badanych prób w czasie 12 dni przechowywania w temperaturze 4°C. W próbach moczonych w 10% roztworze H2O2 przez 5 minut, po 12 dniach przechowywania produktu, nastąpił spadek liczby bakterii mezofilnych odpowiednio o 2 log, w porównaniu do próby kontrolnej (moczonej w wodzie destylowanej). Wydłużenie czasu obróbki wiórków roztworem H2O2 zwiększyło efektywność antymikrobiologicznego działania roztworu dezynfekującego. Zastosowanie przemywania wiórków 10% roztworu H2O2 przyczyniło się do uzyskania produktu mało przetworzonego o jakości sensorycznej i mikrobiologicznej zbliżonej do prób moczonych przez 10 minut w roztworze nadtlenku wodoru o takim samym stężeniu.

The effect of soaking or washing celeriac flakes with a solution of hydrogen peroxide (5% or 10%) on the quality improvement of this minimally processed product was investigated in the study. Microbiological quality, colour in the CIE L*a*b* system and sensory attributes of the product were determined. Combination of soaking celeriac flakes in H2O2 solution with modified atmosphere of packaging had improved the sensory attributes and microbiological quality of the investigated samples during a 12-day storage at 4°C. In samples soaked in 10% H2O2 solution for 5 minutes, after 12 days of product storage the counts of mesophilous bacteria was lower by 2 log than in the control (soaked in distilled water). Extension of time of flake processing with H2O2 solution to 10 minutes increased the effectiveness of the antimicrobial action of the disinfecting solution. The application of 10% H2O2 solution to wash celeriac flakes resulted in a minimally processed product with the sensory and microbiological quality similar to those of samples soaked for 10 minutes in a hydrogen peroxide solution of an identical concentration.
