The influence of high pressures on content of saccharides in pressurized carrot juices

Jedną z najnowszych metod przedłużenia trwałości produktów żywnościowych z zachowaniem ich wartości odżywczej i jakości sensorycznej oraz zapewnienia bezpieczeństwa zdrowotnego konsumentów jest technologia wysokociśnieniowa HPP (High Pressure Processing). Celem pracy było określenie wpływu parametrów utrwalania metodą HPP oraz czasu przechowywania na zakres zmian zawartości sacharydów ogółem i sacharydów redukujących w badanych sokach przecierowych z marchwi. W czasie przechowywania analizowanych soków stwierdzono stopniowe obniżanie się zawartości sacharydów ogółem przy towarzyszącym wzroście zawartości sacharydów redukujących. Stopień zmian analizowanych wskaźników zależał od zastosowanych parametrów procesu kompresji i czasu przechowywania utrwalonych soków.

High pressure processing (HPP) is one of the emerging technologies in food processing and preservation which offers the opportunity of producing food of high quality, greater safety and increased shelf-life. The purpose of this study was to determine the impact of HPP parameters and storage time on the range of changes in total saccharides and reducing saccharides contents in the pressure processed carrot juices. During the reported storage period observed decrease of total saccharides content was associated with an increase of reducing saccharides content. The extent of noticed changes of analyzed factors depended of compression parameters and storage time of the researched carrot juices.
