Starzenie zieleni ciętej związane jest z powstającym stresem oksydacyjnym. W doświadczeniach sprawdzono wpływ antyoksydantów niskocząsteczkowych, jak BHA, witamina E, witamina C i preparat handlowy Citrosept® (Szwecja) zawierający kwas askorbinowy i flawonoidy na pozbiorczą trwałość ciętych pędów szparaga sierpowatego. Antyoksydanty podano w formie 24-godzinnego kondycjonowania, po czym pędy przekładano do wody destylowanej. Wykazano, że jedynie kondycjonowanie w roztworze witaminy C (500 mg·dm-3) przedłuża pozbiorczą trwałość badanego gatunku. W kolejnych doświadczeniach określono wpływ w/w antyutleniacza, pożywki standardowej oraz regulatorów wzrostu (benzyloadeniny i kwasu giberelinowego), wykazanych wcześniej jako związki istotnie przedłużające trwałość ciętych pędów szparaga sierpowatego, na procesy związane ze stresem oksydacyjnym. Określono zawartość nadtlenku wodoru, jako podstawowej reaktywnej formy tlenu oraz dokonano analizy aktywności enzymów wchodzących w skład systemu obrony przed reaktywnymi formami tlenu, a więc katalazy i peroksydazy. Wykazano, że w czasie postępującego starzenia pędów kontrolnych, tj. wstawionych bezpośrednio po zbiorze do wody destylowanej, następuje istotny wzrost poziomu nadtlenku wodoru, spadek aktywności katalazy i wzrost aktywności peroksydazy. Zastosowanie substancji chemicznych wpłynęło jednak na tempo zmian badanych parametrów.

Senescence of cut greens is connected with the appearance of the oxidative stress. The effect of several low-molecular antioxidants, such as BHA, vitamin E, vitamin C and a combination of vitamin C and flavonoids in a commercial preparation (Citrosept®, Sweden) on the post-harvest longevity of Asparagus falcatus shoots was investigated. Antioxidants were applied as a 24 h conditioning after which shoots were transferred into distilled water. Out of all the combinations tested, only 500 mg·dm-3 vitamin treatment increased the post-harvest longevity of the investigated species. In the subsequent tests, the effect was determined of the treatment with the above mentioned antioxidant, standard preservative and growth regulators (benzyladenine and gibberellic acid) which were known as prolonging the post-harvest longevity in asparagus on processes related to the oxidative stress. The hydrogen peroxide content as a basic reactive form of oxygen was determined and the activity of enzymes consisting the defense system against the reactive forms of oxygen, i.e. catalase and peroxidase were analyzed. It was demonstrated that during the progress of senescence of the control shoots, i.e. put into the distilled water directly after harvest, a significant increase of the hydrogen peroxide level takes place, the activity of catalase decreases while the activity of peroxidase increases. However, the application of chemical substances affected the rate of changes of the investigated parameters.
