Celem pracy było określenie wpływu różnych szczepów drożdży gorzelniczych oraz dodatku stymulatorów (związków mineralnych) na szybkość i wydajność procesu alkoholowej fermentacji melasy. Oceniono także jakość otrzymywanego spirytusu surowego. Wykazano, że rodzaj użytego szczepu drożdży gorzelniczych oraz dodatek stymulatorów był istotny. Przy zastosowaniu drożdży rasy O₁₁, po 72 h fermentacji uzyskano stężenie alkoholu na poziomie 8,04 % (v/v). Było ono o 15 % większe od stężenia alkoholu uzyskanego przy użyciu drożdży D-2 oraz o 3 % większe – w przypadku drożdży As-4. Dodatek stymulatorów w postaci związków mineralnych wpłynął na zwiększenie tempa namnażania drożdży gorzelniczych, a tym samym na wzrost wydajności fermentacji alkoholowej. Największą wydajność alkoholu uzyskano w przypadku zastosowania stymulatorów w postaci mieszaniny: siarczanu(VI) magnezu, fosforanu(V) amonu oraz pantotenianu wapnia (sm+fa+pw). W tym wariancie po 72 h procesu wydajność alkoholu z sacharozy zawartej w melasie kształtowała się na poziomie 63,16 dm³ A₁₀₀·100 kg⁻¹ (przy sprawności fermentacji 92,83 %) i była większa o 5 % w stosunku do próby kontrolnej (60,07 dm³ A₁₀₀·100 kg⁻¹ sacharozy). Najważniejszym efektem, jaki osiągnięto przy zastosowaniu stymulatorów fermentacji, była poprawa jakości spirytusu surowego. Uzyskano zawartość aldehydów mniejszą o 69 % w stosunku do próby kontrolnej.

The objective of the research study was to determine the effect of various distillery yeast strains and the addition of stimulants (mineral compounds) on the rate and efficiency of alcoholic fermentation process of molasses. Furthermore, the quality of the raw spirit produced was assessed. It was proved that the type of distillery yeast strains and the addition of stimulants were significant. Upon the application of O₁₁ species of yeasts, after 72 hours of the fermentation process, the alcoholic strength level was 8.04 % (v/v). It was 15 % higher than the alcoholic strength level of alcohol produced using D-2 yeasts and 3 % higher when using As-4 yeasts. The addition of stimulants in the form of mineral compounds caused the growth rate of distillery yeasts to increase and, consequently, the efficiency of alcoholic fermentation to increase. The highest alcohol yield was reported when using stimulants in the form of a mixture of: magnesium sulphate (VI), ammonium phosphate (V), and calcium pantothenate (sm+fa+pw). In that variant, after 72 hours of the process, the alcohol yield from sucrose contained in the molasses was 63.16 dm³ EtOH·100· kg⁻¹ (and the fermentation efficiency was 92.83 %), and it was 5 % higher compared to the control sample (60.07 dm³ EtOH·100 kg⁻¹ of sucrose). The most important effect of the use of fermentation stimulants was the improvement of raw spirit quality. Compared to the control sample, the obtained content of aldehydes was 69 % lower.
