Предпсылкой исследований было определение уровня избранных групп неспецифической и болезнетворной микpoфлоры в механически рекуперированном мясе (МРМ) скота и свиней по сравнению с мясом, лишенным костей вручную, и рубленым мясом, а также ее изменчивости в зависимости от вида животных. Определено общее число аэробных микроорганизмов в 1 г, число протеолитических, психрофильных микроорганизмов рода Proteus, титр coli, энтерококков и анаэробных спорулирующих палочек, а также наличие микроорганизмов рола Salmonella и коагулазо-положительных стафилококков. Определения проведено по Польским нормам. Наивысшее загрязнение исследуемыми грyппами микроорганизмов отмечено в мясе, рекуперированном механически, несколько меньшее — в мясе, лишенном костей врyчнyю, а наименьшее — в рyбленом мясе. Общее бактериальное загрязнение МРМ составляло ок. 10⁷ микроорганизмов в 1 г и отличалось существенно от загрязнения 2 остальных видов мяса. Фактором, существенно влияющим на бактериальное загрязнение МРМ, оказался вил животных. МРМ свиней но сравнению с говялиной отличалось существенно высшим числом аэробных, протеолитических, психрофильных микроорганизмов и pода Proteus, зато 10-кратно низшим титром coli. Лишь титр энтерококков удерживался на том же уровне в мясе обоих видов животных. Ни в одной из исследуемых в общем 540 проб механически рекуперированного мяса скота и свиней не обнаружено микроорганизмов рода Salmonella, коагулазо-положительных и анаэробных спо- рулирующих микроорганизмов. В одной пробе рубленого мяса показано наличие коагулазоположительных стафилококков.

The purpose of the work was to determine the level of chosen groups of non-specific and pathogenic microflora in bovine and pig meat mechanically separated (MSM) compared with meat minced or deboned manually, and to assess the bacterial variability depending on the species of animals. There was estimated the general number of aerobic bacteria in 1 g of meat, the number of proteolytic microorganisms, psychrophilic ones, of the genus Proteus, the titers of E. coli, enterococci and aerobic sporogenic bacilli. Besides, the samples were examined for the presence of salmonellae and staphylococci coagulase-positive. The assessment was done according to Polish norms. The highest contamination by the above groups of bacteria was found in meat separated mechanically, a little lower in meat deboned manually and the lowest in meat minced. A general bacterial contamination of MSM was 10⁷/1 g and differed considerably from that observed in other sorts of meat. The species of animals appeared to be a factor playing a significant role in contamination. MSM of pigs compared with beef characterized a significant higher number of aerobic bacteria, proteolytic and psychrophilic ones, and the number of Proteus; however E. coli titer was 10 times lower. The titer of enterococci was on the same level in meat of the species examined. No bacterial strains of Salmonella sp., Staphylococcus (coagulase positive strains) and sporogenic bacilli were found in 540 samples of MSM. One case of the presence of coagulase-positive strain of Staphylococcus sp. in minced meat was noted.
