W pracy badano wpływ wielkości i części korzenia buraka ćwikłowego na zawartość barwników betalainowych, betainy, azotanów(V) oraz na aktywność przeciwutleniającą soku z buraka ćwikłowego odmiany Bonel. Surowiec podzielono pod względem masy na cztery grupy wielkościowe: A – 151–200, B – 201–300, C – 301–400, D – >400 g. W obrębie każdej grupy korzenie krojono poprzecznie do osi na cztery części, umownie oznaczone: G, GCP, ŚCP i DCP. Z tak podzielonych buraków przygotowano sok. Stwierdzono, że wartości wszystkich badanych wyróżników zależały od wielkości i części korzenia. Największą zawartość barwników betalainowych miały soki z korzeni buraków z grupy wielkościowej A. Korzenie z grupy wielkościowej C i D odznaczały się największą zawartością azotanów(V). W porównaniu ze środkowymi częściami korzenia buraka, górna i dolna części miały większą zawartość barwników i większą aktywność przeciwutleniającą, ale mniejszą zawartość azotanów(V). Aktywność przeciwutleniająca soku była istotnie skorelowana z zawartością barwników.

The aim of the work was to estimate the content of betalain pigments, betaine, nitrate and antioxidant capacity of beetroot juice depending on the weight and the parts of root. The roots of red beet variety Bonel were divided according to their weight into four groups: A – roots of mass below 100 g (average 80 g); B – roots of mass 101–200 g (average 147 g); C – roots of mass 201–300 g (average 261 g); D – roots of mass above 300 g (average 469 g). Than were divided transverse to the axis into four parts conventionally called G – head, GCP – upper under leaf part, ŚCP – the central under leaf part, DCP – the bottom under leaf part, and then was prepared juice. It was found that the content of all studied traits the juice significantly depended on the size and parts of beetroot roots. Large differences were found in betalains, betaine and nitrate(V) contents depending on the size of beetroot roots. The highest content of purple and yellow pigments were characterized by the juices of beet roots with the lowest weight group size A (151–200 g). The content purple pigments equal from 820 mg∙L⁻¹ for the group size A to 456 mg∙L⁻¹ for the group size D (above 400 g). In the case of yellow pigments downward trend was not observed. Antioxidant capacity decreased with increasing root weight. The antioxidant capacity of juice is significantly correlated with pigment contents. The content of betaine developed in the range of from 1,093 to 1,890 mg∙L⁻¹ of juice. The roots from the groups size B (201–300 g) and C (301–400 g) compared to the roots of the groups size A and D characterized by the highest content of nitrates(V). Compared to the middle parts of beetroot (GCP and ŚCP), upper (G) and lower (DCP) part were characterized by a higher content of betalain pigments, higher antioxidant capacity and lower content of nitrates(V). The results may be helpful in designing beetroot based products, with different proportions between the content of pigments and nitrate(V).
