Celem pracy była charakterystyka słodów o zawartości białka poniżej 10,0% s.m. pod kątem zawartości w nich różnych form azotu. Materiałem do badań były próbki słodów przemysłowych różnych odmian ze zbiorów z 2009 r. i 2010 r., pochodzące z krajowych słodowni, o zawartości białka: 8,4–9,7% s.m. Badane słody reprezentowały różne odmiany jęczmienia browarnego, przerabiane najczęściej przez polskie słodownie. Próbki słodów niskobiałkowych wykazywały duże zróżnicowanie pod względem większości badanych parametrów, szczególnie: liczby Kolbacha, zawartości azotu albumozowego i zawartości peptydów ogółem oznaczanych metodą Bradforda. Istotne statystycznie różnice pomiędzy słodami niskobiałkowymi a słodami z grupy porównawczej stwierdzono dla zawartości: białka rozpuszczalnego, azotu: ogółem, wysokocząsteczkowego i niskocząsteczkowego oraz peptydów ogółem oznaczanych metodą Bradforda. Nie stwierdzono natomiast istotnych różnic pomiędzy wyznaczonymi dla obydwu grup słodów średnimi wartościami dla zawartości: wolnego azotu aminowego, azotu albumozowego i azotu średniocząsteczkowego. Dla badanej grupy słodów niskobiałkowych stwierdzono dodatnią korelację między poziomem białka ogółem w słodzie a zawartością w brzeczce laboratoryjnej azotu wysokocząsteczkowego i peptydów ogółem oznaczanych metodą Bradforda.

The aim of this study was characterization of malts with a protein content below 10.0% DM for the content different forms of nitrogen. The experimental material were samples of industrial malts from the harvest of 2009 and 2010, derived from domestic malting plants, with a protein content between 8,4 and 9,7% DM. Studied malts represented different varieties of malt barley. The samples of low protein malts showed large variation in most of the examined parameters, in particular: the Kolbach index, albumose nitrogen content and total peptide content determined by Bradford. Significant differences between low protein malts and control malts was observed for the content: soluble protein, total nitrogen, high molecular weight nitrogen, low molecular weight nitrogen and total peptides content determined by Bradford method. There were no significant differences between the mean values for two groups malts for the content: the free amino nitrogen, albumose nitrogen and medium molecular weight nitrogen. For the studied group of low protein malts positive correlation between the level of total protein in the malt and the content of high molecular weight nitrogen in the laboratory wort and total peptides determined by Bradford were observed.
