В статье представлены результаты исследований влияния давления гомогенизации на свойства молочных продуктов, особенно на запах и вкус, а также отделение сыворотки во время хранения. В работе представлены также результаты исследований влияния давления гомогенизации на микроструктуру жира в молоке и белков в сливках.

In the article there have been presented the results of the study of homogenization pressure influence on the properties of dairy products and particularly on such properties as smell, taste and the ability of milk and cream to form curd and to educe whey in the storing process. Apart form the above there have been presented the results of the study of homogenization pressure influence on the microstructure of milk fat phase and the microstructure of cream protein phase.
