Racje pokarmowe mieszkańców strefy ochronnej Huty im. T. Sendzimira pokrywały zapotrzebowanie na energię w 82%, węglowodany w 77%, tłuszcze w 95%, białka w 126% (jesienią) i w 139% (wiosną). Stwierdzono wysoki udział tłuszczów (-34%) i równocześnie zbyt niski węglowodanów (-53%) oraz prawidłowy białek (13%) w całkowitym pokryciu potrzeb energetycznych. Wartości Wskaźnika Jakości Żywieniowej INQ wskazują, że analizowane racje pokarmowe były dobrze zbilansowane pod względem zawartości tłuszczów, białek, lecz nie dostarczały odpowiedniej ilości węglowodanów w stosunku do ich wartości energetycznej.

Studies of nutrition patterns were conducted in autumn 1996 and 1997, and in spring 1997 and 1998. The studies comprised 10 families living on farms located in the T. Sendzimir Steelworks protection zone. The majority of the participating families were three-generation farmer of farmer/worker families, with medium-high income, using mainly their own crops and other self-made products for food. The nutrition patterns were assessed by keeping daily food intake records evaluated on 7-day basis. A total of 1076 records were collected. The calculations were performed using the FOOD-2 software. The food rations of the inhabitants of the T. Sendzimir Steelworks protection zone covered 82% of then- energy requirements, 77% of the requirements for carbohydrates, 95% for fat, and 126% (autumn) or 139% (spring) for protein. The contribution of fat to the total energy supply was too high (-34%), the contribution of carbohydrates was too low (-53%) while the contribution of protein was correct (~ 13%). INQ (Index of Nutritional Quality) values showed that the analysed food rations were well balanced with respect to fat and protein content but did not provide sufficient carbohydrates in relation to their energy value.
