Pieczarka Agaricus bisporus jest najważniejszym grzybem uprawnym w Polsce, gdyż charakteryzuje się wysoką wydajnością owocników (25-35 kg z 1 m2), doskonałej jakości. Dlatego owocniki pieczarki znajdują licznych odbiorców w krajach Unii Europejskiej i Rosji. Na jakość pieczarek mają wpływ: gatunek, odmiana, metoda uprawy, obecność chorób i szkodników, stosowane środki ochrony oraz warunki zbioru i przechowywania. Obecnie dla przetwórstwa uprawia się tzw. odmiany pośrednie (in-between group), bowiem łatwo wiążą owocniki, a ich jakość jest odpowiednia dla przemysłu. Grzyby dostarczane do zakładu przetwórczego muszą być świeże, czyste, zdrowe, pozbawione obcych zapachów, bez śladów chorób i szkodników.

In Polish mushroom processing industry, Agaricus bisporus is the most important species because of high yield (25-35 kg/m2) and excellent quality of fruit bodies. Fresh and processed mushrooms are sold on the markets of the EU countries and Russia. The quality of a final product is determined by the species used, the strain, method of cultivation, occurrence of pests and diseases, application of pesticides, freshness and the processing turnover. At present, the so-called in-between group is the most popular group of strains for processing because of the easiness of fruit bodies ' formation and its satisfactory quality. From the standpoint of quality two factors are of the main importance: the temperature during cultivation and the air moisture.
