W artykule przedstawiono możliwości zastosowania komputerowej analizy obrazu w technologii żywności. Obecnie analiza ta wykorzystywana jest głównie do oceny jakości zarówno surowców, jak i gotowych produktów żywnościowych. Uwzględnia cechy badanego materiału, takie jak: barwa, wielkość, kształt.

In the paper there are described possibilities of applying of computer image analysis to different branches of food technology. This analysis has been mainly utilized to quality assessment of both raw materials and final food products. It includes such attributes of tested material as colour, size and shape
