W artykule podano podział substancji słodzących oraz omówiono grupę intensywnych substancji słodzących tzw. słodzików. Przedstawiono historię odkryć słodzików, ich spożycie według ilości i wartości oraz światowy rynek słodzików - jego podział w różnych regionach świata.

The high intensive sweetening substances have greater and greater importance in the drink industry. That's why we decided to spend more of place for them in our magazine. In this edition we start the series of papers where we will present the research about sweeteners, history of sweetening substances and perspectives of this market development. We will also present consumption of sweeteners in the world, the groups of sweetener consumers, legislative problems, regulations of admission of sweeteners to the consumption and criteria of sweetener purity in EU. In this paper there is presented the partition of sweetening substances and there is discussed the group of high sweetening substances. There is presented history of sweeteners discovery, their consumption by quantity and value and world market of sweeteners.
