The rate of rapeseed, soybean, sunflower and olive oils oxidation, measured by primary and secondary products accumulated at 60°C in the dark was different. The content of linolenic acid was the main factor which accelerated oxidation. The content of chlorophylls, carotenoids and tocopherols influenced oxidation rate in less degree.
