Ocena zawartosci glutenu w produktach dietetycznych stosowanych w Polsce w leczeniu celiakii

Przedstawiono wyniki oznaczeń zawartości gliadyny (glutenu) w surowcach i gotowych wyrobach dietetycznych, stosowanych w Polsce w diecie eliminacyjnej u osób chorych na celiakię (glutenozależna enteropatia). Badania wykonano metodą immunoenzymatyczną (ELISA) według propozycji grupy ekspertów FAO / WHO. Wyniki porównano z badaniami wykonanymi w latach 1991-1992. W porównaniu z latami ubiegłymi stwierdzono znaczną poprawę jakości produktów dietetycznych dostępnych obecnie na rynku krajowym.
