Celem pracy było określenie zawartości azotanów(V) i (III) oraz kadmu i ołowiu w świeżych korzeniach marchwi, pietruszki, selera oraz buraka i po sześciomiesięcznym przechowywaniu w kopcu ziemnym. Sześciomiesięczne przechowywanie warzyw wpłynęło na wzrost zawartości azotanów(III) i (V) w korzeniu pietruszki i selera, kadmu w korzeniu marchwi i buraka, a ołowiu w korzeniu marchwi i pietruszki.

The aim of this work was to analyse the contents of nitrates V, nitrates III, lead and cadmium in the fresh roots of carrot, parsley, celery and beet, and in the roots of the same vegetables stored during six months in the clamp. The beet root and celery were characterised by significantly higher levels of nitrates V and III compared with the carrot and parsley roots, while a significantly lower accumulation of lead was noted in the beet root, and of cadmium in carrot and celery compared with other studied vegetables. The six month storage of the selected root vegetables in the clamp increased the concentration of nitrates V and III in the root of parsley and celery, and of lead in the carrot and parsley roots. Compared with their skin, the parsley and the beet parenchyma showed lower nitrate III, cadmium and lead accumulation, while in the parenchyma of carrot an celery there was less nitrates V and more lead.
