Oszacowano wartość odżywczą sanatoryjnych całodziennych racji pokarmowych w oparciu o raporty magazynowe jednego z sanatoriów w Polsce. Stwierdzono nadmiar energii i tłuszczu w odniesieniu do norm dla kobiet, nadmiar sodu i fosforu, niską zawartość żelaza w odniesieniu do norm dla kobiet, niską cynku w odniesieniu do norm dla mężczyzn, niedobór witaminy E, B1 i 70% C, a dla mężczyzn także niedobór Zn i witaminy B2 i PP.

The aim of this study was to estimate energy value and the content of the basic nutrients in daily food rations in a sanatorium, using the FOOD-3.0 software, and compare the female and male daily intakes with the recommended values. The results point to incorrect proportion of fatty acids, Na and P. Energy, fat and vitamin B6 supply was excessive in the female food rations. The supply of vitamins E, B1, C, and for the females also of Fe was insufficient. The male rations were deficient in Zn and vitamin B2 and PP. The analysis revealed excessive consumption of cereal products, meat, meat products and fish, butter, while the intake of milk and dairy products, eggs, other fats, vegetables and fruits was too low.
