Przedstawiono wyniki badań zawartości manganu w ponad 6800 próbek środków spożywczych pochodzenia roślinnego i zwierzęcego, dostępnych na terenie Polski północnej w latach 1986 - 1990. Mangan oznaczano metodą płomieniowej AAS po spopieleniu próbek metodą suchą.

Manganese content has been assayed in over 6800 samples of foodstuffs available in Northern Poland between 1986 and 1990. The method of measurement was flame AAS after dry ashing of the sample. The investigated vegetables and fruits as well as edible seeds were found to be characterized by differentiated manganese concentration. Most of the species and varieties under test were noted to contain ≤ 1.0 mg Mn/kg, and some of them - from 1.1 to 3.0 mg Mn/kg. Broad bean, young beet leaves, red beet, endive, kale (Brassica olaracea varietas sabellica), dill, leaves of the plant maggi, parsley leaves, wild strawberry (garden planted), and spinach contained on the average between 3.1 and 6.0 mg Mn/kg; celery leaves, cuckoo flower, and sorrel - between 6.1 and 7.0 mg Mn/kg; bean, pea, and sunflower seed - between ~ 10 and 30 mg Mn/kg; poppy seed - 67 mg Mn/kg; pumpkin seed - 83 mg Mn/kg. Black tea was found to be very rich in manganese (on the average 930 mg/kg), less so some edible leaves and berries of wild growing plats including undergrowth. Generally rich in manganese were found to be cereals and cereal products (in particulare bread, flakes, and groats), and from among the imported products - processed pineapple, rice, and some spices. Meat and fish products were noted to be very rich in manganese. Average concentration of this element rangs between: 0.10- 0.25 mg/kg in the muscle meat, 0.7 - 2.2 mg/kg in the liver, and 0,94 - 2.0 mg/kg in kidneys of slaughtered and game animals, and between 0.087 - 0.65 mg/kg in the muscle tissue of Baltic fish.
