W pracy podjęto próbę oceny żywienia osób z nadwagą i otyłością oraz parametrów lipidowych i glukozy w surowicy krwi. Stwierdzono liczne zwyczajowe błędy żywieniowe (dojadanie między posiłkami, dojadanie nocne, nieregularność posiłków, brak kontroli nad kalorycznością racji pokarmowych) oraz duże indywidualne różnice w spożyciu głównych składników odżywczych. Zarówno u osób z nadwagą jak i otyłością obserwowano duży odsetek osób z podwyższoną glikemią na czczo. Zaburzenia lipidowe w surowicy krwi częściej dotyczyły mężczyzn. Również średnie spożycie cholesterolu pokarmowego przekraczało u nich 300 mg/dziennie.

Overweight or obesity and bad eating habits may lead to disturbances in metabolic parameters in the human body. Obesity is a chronic disease, affecting other diseases of the circulatory system, type II diabetes, gall stones and others. The aim of the study was to evaluate the effect of nutrition on lipid and carbohydrate metabolism in people with overweight or obesity. The study involved 182 people (153 women and 30 men). All of them underwent antropometrie examinations and questionnaire investigations referring to their eating habits. Quantitative evaluation of nutrition was based on the method of 24-hour history of the day preceding the examination (the examination was repeated three times and the results were averaged). Energetic values and the content of nutrients in daily food rations were determined with a computer programme FOOD 2, the results being compared with the norms safe for adults with low physical activity according to the Institute of Food and Feeding in Warsaw. Biochemical tests were conducted in each patient to evaluate lipid and carbohydrate metabolism (strip test method). Overweight was found in 53 women and 7 men, obesity in 99 women and 23 men. The largest number of women and men had secondary education, a little fewer - higher education. Numerous dietary errors were noted, referring to the eating habits (snacks between meals, substantial dinners, night eating, lack of control over caloricity of meals and others). The energetic value varied considerably both in women with overweight (477.0-3473.0 kcal) and obesity (385.0-4638.0 kcal); in men with overweight (1568.0-3645.0 kcal) and obesity (849.0-7706.0 kcal). Similar differences in consumption were observed in reference to the content of main nutrients. High mean consumption of food cholesterol was noted in men with overweight (338.6 mg± 154.78) and obesity (437.4 mg±428.46) and low mean food cellulose intake was observed in women with overweight (20.2 g±9.64) and obesity (18.7 g±8.46) and in men with overweight (23.9 mg± 11.46). Blood lipid parameters were estimated. Total cholesterol levels were elevated in 35.8% of women with overweight, in 28.9% of obese women and in 50% of the men examined. Elevated values of triglycerides were noted in men with overweight (20%) and obesity (13%). Glycemia evaluation on empty stomach revealed elevated glucose levels in 24% of the women examined, in 57.1% of men with overweight and in 30.4% of men with obesity; diabetes was treated in 5.7% of women with overweight, in 6.1% of obese women, in 145.3% of men with overweight and in 8.7% of the obese. It is difficult to state definitely whether the observed metabolic disorders result from improper diet or the previously existing overweight or obesity. Undoubtedly, treatment of excessive body mass (also by properly chosen diet) will contribute to the improvement of lipid parameters and carbohydrate metabolism in the organism.
