Celem pracy było określenie stopnia wdrożenia zasad GHP, GMP oraz HACCP w stołówkach przedszkolnych i szkolnych woj. małopolskiego. Zasady GHP/GMP sa˛ wdrożone i stosowane w 80% przebadanych stołówek. Stwierdzono, że zaledwie w 5 placówkach wdrożono zasady systemu HACCP, a 66% stołówek przedszkolnych oraz 59% stołówek szkolnych rozpoczęło proces jego wprowadzania.

The aim of this study was to assess the extent to which Good Hygienic Practice (GHP) and Good Manufacturing Practice (GMP) principles and Hazard Analysis and Critical Control Points (HACCP) system was implemented in nursery school and school canteens of Cracow province. The study was carried out in 2005 in 615 nursery school and 587 school canteens. The estimation of the extent to which GHP, GMP and HACCP had been implemented was done using the following score: no principles implemented, implementation in progress, implementation completed. It was found that only 5 canteens complied with HAACP system principles, 66% nursery school and 59% school canteens were in the course of putting the new law into the practice. The principles of Good Hygienic Practice and Good Manufacturing Practice were implemented in 80 of all studied canteens. The results of the study show serious deficiencies in the 41% of the canteens which had not started implementation of the HACCP, even though it was required by law. Food safety of the meals served to the children at those facilities could be, therefore, adversely affected.
