The aim of the study was to determine the ability of Bacillus cereus strains, isolated from different sources, to grow in temperatures ranging from 4° to 43°C. The investigation material was 200 strains of Bacillus cereus isolated from cow feces, raw milk, pasteurized milk and mould ripened cheese. The ability to grow at temperatures of 4°, 6°, 8°, 12°, 30°, 43°C, was found in 1%, 1%, 15%, 100%, 100%, 85% strains respectively. Psychrotrophic strains of the Bacillus cereus are found in ready-for-consumption nutritive products, and a temperature range from 4° to 8°C does not have an influence on the possibility of their growth and reducing the quality of milk products. Among strains originating from cow feces and raw milk, strains of a mesophilic character prevail, whereas strains originating from milk products mostly have a psychrotrophic character. This can demonstrate the selection and adaptability of Bacillus cereus strains to grow in low temperatures in the course of production and milk product storage.
