PL

Piwowar może kształtować właściwości sensoryczne piwa dobierając warunki i parametry fermentacji. W artykule omówiono czynniki wpływające na przebieg fermentacji i właściwości sensoryczne piwa. Są to: właściwości szczepu (szczepów) drożdży; stan i witalność drożdży, ilość inoculum, skład brzeczki (moc brzeczki podstawowej, skład cukrów, zawartość tłuszczów), rodzaj naczynia fermentacyjnego, napowietrzenie, mieszanie, temperatura, ciśnienie, zanieczyszczenia.

Beer producer can create the sensory beer proprieties by the selecting of conditions and parameters of fermentation. In the paper there are discussed the factors influencing on the process of fermentation and sensory proprieties of the beer. They are: the proprieties of yeast seedling, state and vitality of y east, inoculum quantity, wort composition (power of base wort, sugar composition, lipids contents), the kind of fermentation tank, aeration, mixing, temperature, pressure and contamination.
