Praca stanowi część badań długookresowych nad stanem zdrowia, sposobem żywienia się i stanem odżywienia ludzi w wieku podeszłym. W ramach tych badań prześledzono stan odżywienia witaminami antyoksydacyjnymi oraz zmiany w okresie 5 lat. Przeprowadzona ocena zawartości witamin w surowicy krwi wykazała występowanie ryzyka niedoboru wielu witamin: kwasu foliowego, witaminy B6, witaminy C, karotenów i witaminy E. W grupie mężczyzn w wieku 75 ± 0,6 lat, badanych po raz pierwszy w 1992 roku, a następnie ponownie w 1997 roku, ryzyko niedoboru witaminy B6 zwiększyło się z 12% do 93%, kwasu foliowego z 65% do 91%, ryzyko niedoboru witaminy E/Ch zmniejszyło się z 21% do 7%. W grupie kobiet badanych w latach 1992 i 1997 zwiększyło się ryzyko niedoboru witaminy B6 z 13% do 48%, zmniejszyło ryzyko niedoboru witaminy E/Ch z 30% do 3%. Zarówno u kobiet, jak i mężczyzn w wieku podeszłym poprawił się stan wysycenia organizmu karotenami całkowitymi. W oparciu o kryteria optymalnego wysycenia organizmu witaminami antyoksydacyjnymi, suboptymalny stan odżywienia witaminą E występował u 41%, a karotenami u 34% badanej grupy osób w wieku podeszłym.

The reported work is a part of long-lasting studies on the health status, nutrition mode and nutritional status of people in old age. In the work the nutritional status with respect to antioxidant vitamins was studied, including its changes in a time period of five years. The determinations of serum vitamin levels showed the risk of deficiency of many vitamins: folic acid, vitamin B6, vitamin C, carotenes and vitamin E. In the age group 74 ± 0.6 years in males studied for the first time in 1992 and again in 1997 the risk of vitamin B6 deficiency rose from 12% to 93%, folic acid deficiency risk increased from 65% to 91%, and vitamin E/Ch deficiency risk decreased from 21% to 7%. In the female population studied in 1992 and 1997 the risk of vitamin B6 deficiency rose from 13% to 48%, while the risk of vitamin E/Ch deficiency decreased from 30% to 3%. Both in females and males the degree of organism saturation with total carotenes was improved. In the light of the criteria of optimal saturation of the organism with antioxidant vitamins suboptimal vitamin E nutrition status was found in 41% and that of carotenes in 34% in the studied group of old people.
