The nitrate level was determined in potato tubers of 5 varieties grown in a five-year cycle. The effect of weather conditions during the vegetative season on the level of the studied compounds was analyzed. The content of nitrates in potatoes over the 5-year period was in the range of 82 to 848 mg/kg fresh weight of tubers and averaged to 267 mg/kg. Based on the results obtained it can be ascertained that if the weather during the vegetative period of potatoes is characterized by high mean daily temperatures of air and low rainfall a high level of nitrates in the tubers is to be expected.

W bulwach 5 odmian ziemniaka jadalnego uprawianego w pięcioletnim cyklu oznaczona zawartość azotanów. Przeanalizowano wpływ warunków pogodowych panujących w czasie wegetacji na poziom badanych związków. Stwierdzono istotny wpływ roku uprawy na poziom azotanów w bulwie oraz temperatury powietrza, opadów atmosferycznych i nasłonecznienia.
