Celem pracy było oznaczenie kwasu foliowego i folianów w fortyfikowanych sokach owocowych oraz zbadanie możliwości skrócenia metody ich oznaczania. W badanych sokach stwierdzono o około 30% niższe zawartości kwasu foliowego niż deklarowane przez producentów. W doświadczeniu modelowym nie stwierdzono istotnego wpływu dodatku enzymów i ekstrakcji w temperaturze 100°C na wynik oznaczenia dodanego kwasu foliowego. Wynika z tego, że metodę oznaczenia kwasu foliowego można skrócić i pominąć etapy: ekstrakcji oraz hydrolizy. Etapy te miały natomiast istotny wpływ (α = 0,05) na wynik oznaczenia naturalnej formy folianów, tj. 5-metylotetrahydrofolianu.

The aim of the study is to examine folic acid and folate content in fortified fruit juices and to shorten the method of these compounds determination. In the tested juices, folic acid was found at the level of about 30% less than declared by the manufacturers on the product package. In the pilot study, no significant effect of enzymes addition and extraction at 100 °C on the result of additive folic acid determination was observed. Thus, it can be concluded that in folic acid determination method the extraction and hydrolysis steps can be omitted. However, the mentioned steps had a significant effect on the result of natural folate form, 5-methyltetrahydrofolate, determination.
