Celem pracy było określenie wpływu przechowywania mięsa wołowego w stanie zamrożonym na wielkość wycieków rozmrażalniczych w warunkach zmiennej temperatury rozmrażania. Kolejnym celem badań było określenie tekstury oraz wielkości ubytków masy mięsa poddanego obróbce cieplnej w różnej temperaturze. Materiał badawczy stanowił mięsień półścięgnisty pozyskany z bydła mieszańców ras czarno-biała x limousine. Mięśnie poddane zostały zamrażaniu i przechowywaniu. Następnie próbki rozmrażano w powietrzu w temperaturach 4°C, 10°C lub 20°C oraz poddawano obróbce cieplnej w wodzie w temperaturach 70°C lub 90°C. Oznaczano wielkość wycieków rozmrażalniczych i cieplnych, teksturę mięsa metodami instrumentalnymi, a także przeprowadzono ocenę organoleptyczną kruchości i soczystości. Temperatura rozmrażania mięsa miała istotny wpływ na wielkość wycieków rozmrażalniczych. Zwiększenie temperatury obróbki cieplnej z 70°C do 90°C spowodowało wystąpienie istotnie większych wycieków cieplnych o około 10% w przypadku wszystkich wariantów temperatur rozmrażania. Pomimo wzrostu wielkości wycieku rozmrażalniczego w miarę wzrostu temperatury rozmrażania, wystąpił także wzrost wielkości wycieku cieplnego przy wzroście temperatury ogrzewania z 70°C do 90°C. Wynika z tego, że temperatura rozmrażania i obróbki cieplnej mają decydujące znaczenie dla wydajności uzyskiwanych przetworów i potraw z mięsa wołowego. Suma wielkości wycieków rozmrażalniczych i cieplnych wpływała istotnie na kruchość i soczystość mięsa.

The aim of the study was to determine the effects of storing beef meat in a frozen state on the thawing loss in conditions of differentiated thawing temperature. Another aim was to determine the texture and the amount of heat losses of the meat being heat treated at different temperatures. The research material consisted of musculus semitendinosus taken from mixed cattle race – Black-and-White x Limousine. Muscles were frozen and stored, then the samples were thawed in the air at temperatures of 4oC, 10oC or 20oC, and heat treated in water at temperatures of 70oC or 90oC. The amount of thaw and heat losses was determined, as well as the shear force value, and sensory assessment of fragility and succulence was performed. The meat thaw temperature had a relevant impact on the amount of thaw losses. The increase of temperature in the process of heat treatment from 70oC to 90oC resulted in the occurrence of substantial heating losses increased by 10% in all defrosting temperatures. Despite the increasing amount of thaw losses during raising the thawing temperature, an increase of the amount of heating losses occurred also while raising the temperature from 70oC to 90oC. The results indicate that thawing temperature and heat treatment have a crucial effect on the productivity of processed food products and dishes prepared from beef meat. The total amount of the thaw and heating losses has a vital influence on the fragility and succulence of the meat.
