W pracy przedstawiono wpływ parametrów mikrokapsułkowania oraz stężenia i rodzaju zastosowanego nośnika na ilość aromatu rozmarynowego znajdującego się wewnątrz i na powierzchni mikrokapsułek otrzymanych metodą suszenia rozpyłowego. Suszenie przeprowadzono w temperaturze powietrza wlotowego 200°C, przy dwóch strumieniach surowca 1,07·10-6 i 1,33·10-6 m3·s-1. Wykazano, że zastosowanie gumy arabskiej w składzie nośnika powodowało lepsze zachowanie aromatu wewnątrz mikrokapsułek bezpośrednio po procesie suszenia (30-70%) oraz nieznaczną ilość aromatu rozmarynowego na zewnątrz kapsułek (maksymalnie 7%). Na ilość aromatu zawartą zarówno na powierzchni, jak i wewnątrz kapsułek miała wpływ średnica cząstek proszków, zależna od strumienia podawania i rodzaju użytego nośnika. Im średnica była mniejsza, tym więcej aromatu znajdowało się wewnątrz kapsułki. Ścianki proszków na bazie 30% roztworu maltodekstryny szybciej ulegały degradacji, co powodowało szybszą dyfuzję aromatu z wnętrza kapsułki. Ilość aromatu na ich powierzchni po przechowywaniu wyniosła od 3,5 do 3,8%. Natomiast w przypadku 25% roztworu maltodekstryny wartości te nie przekroczyły 0,5%. Po roku przechowywania mikrokapsułki zawierające gumę arabską miały zdecydowanie mniej aromatu na powierzchni niż bezpośrednio po suszeniu. Niezależnie od zastosowanego rodzaju nośnika, po przechowywaniu proszki aromatu rozmarynowego wykazały dużą stabilność.

The influence of microencapsulation parameters, concentration and type of carrier on the amount of rosemary aroma inside and on the surface of the microcapsules obtained by spray drying was presented in this article. Drying was carried out in the inlet air temperature 200°C, with two feed flux 1.07·10-6 and 1.33·10-6 m3·s-1. It was shown that using Arabic gum as a carrier caused higher aroma retention inside capsules immediately after spray drying (30-70%) and slight amount of rosemary aroma on the surface (maximum 7%). Powder particle diameter, depending on the feed stream and the type of carrier, had influence on the amount of aroma contained both on the surface and inside the capsules. The diameter was smaller, the more aroma inside the capsule. Walls of powders based on 30% maltodextrin solution underwent faster degradation, resulting in faster diffusion of the aroma from inside the capsule. The amount aroma on their surface after storage ranged from 3.5 to 3.8%. These values did not exceed 0.5% for 25% maltodextrin solution. Microcapsules containing Arabic gum after a year of storage had significantly less aroma on the surface than directly after drying, of storage media after rosemary flavor powders, showed high stability. The rosemary aroma powders showed high stability after a year of storage, regardless of the kind of carrier.
