Spośród czynników żywieniowych największe znaczenie dla stężenia cholesterolu LDL (LDL-chol) ma skład kwasów tłuszczowych. Nasycone kwasy tłuszczowe (SAFA) i izomery trans kwasów tłuszczowych (TFA) zwiększają stężenie LDL-chol, a jednonienasycone kwasy tłuszczowe (MUFA) i wielonienasycone kwasy tłuszczowe n-6 (PUFA n-6), zastępując SAFA, powodują spadek LDL-chol i, co jest najważniejsze zmniejszają ryzyko epizodów sercowo-naczyniowych. Aby obniżyć stężenie triglicerydów (TG) należy zredukować masę ciała (jeśli występuje otyłość) oraz ograniczyć spożycie alkoholu i węglowodanów, zwłaszcza cukrów prostych.

Among dietary factors the composition of fatty acids is of particular significance for serum LDL-chol concentration. SAFA and TFA increase LDL-chol, whereas MUFA and PUFA n-6, when replace SAFA, decrease it and what is most important decrease the risk of cardiovascular events. Body weight reduction (in the case of obesity) and limiting alcohol and carbohydrate intake (especially simple sugars) reduce serum TG concentration.
