W opracowaniu podjęto problem instytucjonalizacji tradycyjnych i regionalnych produktów przerobu mleka owczego. Produkty te dotychczas wytwarzane bez certyfikatu, aby mogły być legalnie sprzedawane na obszarze UE, powinny być oficjalnie uznane jako produkty regionalne.

There are four dairy products manufactured of ewe milk, in the Polish Carpathians, i.e. oscypek (hard smoked cheese), bundz and bryndza (soft white cheese) and żętyca (whey of ewe milk). Although manufacturing of these products has a many hundreds year old tradition in the mountains, their formal recognition as traditional and regional products still poses many problems. The other issue is decreasing dairy sheep population and manufacturing fake products on a large scale, such as oscypek made exclusively of bovine milk or only with ewe milk supplement.
