Określono wpływ czasu i temperatury wstępnego odwadniania osmotycznego oraz dodatku kwasu askorbinowego na przebieg izoterm adsorpcji pary wodnej suszy jabłkowych. Nie wykazano istotnego wpływu czasu i temperatury odwadniania osmotycznego na zawartość wody suszy jabłkowych. Zaobserwowano jednak większy wpływ temperatury niż czasu wstępnego odwadniania na zmiany higroskopijności suszy. Wpływ dodatku kwasu askorbinowego na zwiększenie higroskopijności suszy jabłek w zakresie aktywności wody 0,3-0,75 był istotny. Uwzględniając korzystny wpływ wstępnego osmotycznego odwadniania oraz dodatku kwasu askorbinowego można modyfikować właściwości produktu końcowego oraz zmiany higroskopijności suszy jabłkowych, w zależności od przewidywanych warunków ich przechowywania.

The aim of this study was to determine the effect of time and temperature of osmotic dehydration and initial addition of ascorbic acid on the adsorption isotherms of water vapor of dried apples. Osmo-convective dried apples had greater hygroscopicity than convective dried samples. There was not significant effect of time and temperature of osmotic dehydration on the equilibrium water content of dried apples. However, an effect of osmotic dehydration time was higher than the effect of temperature on the hygroscopicity of dried samples. Ascorbic acid increased the hygroscopicity of dried apples in the water activity range of 0.30-0.75. Having a positive effect of osmotic dehydration of apples and the addition of ascorbic acid on the properties of the final product, can be modified the hygroscopicity of dried apples depending on the expected storage conditions.
