During the drying process in a cabinet drier the air temperature and flow velocity ,were kept at following levels: 50, 60, 70, 80, 90°C and 0.7, 1.5, 3 m/s, respectively. Assuming the reference process as proceeding at 70°C and flow velocity 1.5 m/s, jump changes and rectangle impulses were introduced (+/-20°C or +/-0.8/+/-1.5 m/s).To assess physical properties of dried apples following parameters were determined: shrinkage, density, rehydration, compressive force after hydration of a sample and effluent. Using the selected range of constant temperatures or introduced changes for modification of chosen physical properties of dried apples appeared more probable than for the velocity range tested.
