W przedstawionym badaniu otrzymywano koncentraty serwatki kwasowej metodą nanofiltracji przy użyciu poliamidowych membran rurkowych, określono zmiany szybkości permeacji i zmiany zawartości wybranych pierwiastków. Każdy odrębny proces separacji przebiegał z różną szybkością, ale charakter zmian szybkości permeacji w czasie był zbliżony. W koncentracie zawartość składników suchej masy zwiększała się proporcjonalnie do współczynnika koncentracji CR − oprócz substancji mineralnych, takich jak makroelementy (Ca, Mg, P) i mikroelementy (Zn i Fe). Jednocześnie udział sodu i potasu ulegał obniżeniu. Oznacza to, że zastosowane membrany poliamidowe umożliwiają koncentrowanie składników suchej masy serwatki kwasowej przy jednoczesnej częściowej demineralizacji polegającej na obniżeniu zawartości jonów jednowartościowych.

The objective of the study was to produce acid whey concentrates using polyamide tubular membranes. The permeate flux variability and changes in selected elements contents were assessed. Each particular separation was characterized by slightly different permeation rate, but flux decline profiles were similar. In the retentate the compounds of whey dry matter have been concentrated by the factor of concentration ratio except for mineral compounds. The macro- (Ca, Mg, P) and micro elements (Zn, Fe) have been rejected by the membrane and retained in concentrate, meanwhile sodium and potassium contents were reduced. The results obtained indicate that polyamide membranes enable concentration of acid whey dry matter compounds simultaneously with partial demineralization of solutes based on removal of monovalent ions contents with permeate.
