Drożdże, wykazujące antagonizm wobec innych drobnoustrojów, mogą być wykorzystywane jako startery do inicjowania niektórych procesów fermentacyjnych, ponieważ przeciwdziałają rozwojowi drobnoustrojów niepożądanych. Synteza i wydzielanie toksyn killerowych stanowi jedną z możliwości wykluczenia przez drożdże innych drożdży ze środowiska. Celem niniejszej pracy było scharakteryzowanie grupy szczepów drożdży wyizolowanych z różnorodnych środowisk pod względem aktywności killerowej. W badanej grupie drożdży zaobserwowano stosunkowo dużą liczbę szczepów przejawiających właściwości killerowe (14 spośród badanych 35 szczepów drożdży), jednak była to aktywność słaba. Silne właściwości killerowe stwierdzono jedynie w przypadku w szczepu drożdży Candida tropicalis K1. Nie stwierdzono aktywności killerowej żadnego ze szczepów wyizolowanych z winogron i fermentujących moszczy; wszystkie szczepy wyizolowane z winogron i moszczy szczepów należały do wrażliwych.

Yeasts that exhibit antagonism to other microorganisms can be used as starter cultures to initiate some fermentation processes as they counteract the growth of undesirable microorganisms. Synthesis and secretion of killer toxins are one of the features which enables yeast eliminate other yeasts from the environment. The purpose of this work was to characterize a group of yeast strains isolated from various natural environments in terms of killer activity. A relatively high number of strains exhibiting killer properties (14 of the 35 yeast tested) were observed in the yeast group, but this activity was a weak. Strong killer properties were found only in Candida tropicalis K1 yeast strain. No killer activity was found for any of the grape and fermenting musts isolates, all of which were sensitive.
