PL

Biopolimery ulegają dużym zmianom pod wpływem wysokiego ciśnienia. Nie ulegają natomiast zmianom związki o małym ciężarze cząsteczkowym jak np. witaminy i barwniki. Stało się to podstawą wykorzystania wysokich ciśnień (UHP*)) do utrwalania żywności. W artykule przedstawiono przykłady zabójczych ciśnień dla wybranych drobnoustrojów i ich przetrwalników. Wysokie ciśnienia są też nieobojętne dla enzymów. Przedstawiono przykłady oporności niektórych enzymów na wysokie ciśnienia oraz przykłady zastosowań wysokich ciśnień i ich efektów w przypadku niektórych soków owocowych i warzywnych. Omówiono systemy urządzeń stosowanych do utrwalania soków metodą UHP w Japonii. Omówiono badania przeprowadzone w IBPRS nad zastosowaniem metody UHP w Polsce. Zastosowanie ciśnienia 450 MP a w temp. 50o C przez 20 min dało bardzo zbliżone wyniki wyjałowienia do równolegle zastosowanej pasteryzacji w temp. 85° C przez 20 min. Jednak po 3 miesiącach przechowywania jedynie sok utrwalony metodą UHP zachował cechy soku surowego, w przeciwieństwie do soku pasteryzowanego.

Biopolymers undergo big changes under influence of high pressure. The substances of small molecular mass as vitamins don't undergo these changes. It 's the base to use the high pressure for food preserving. In the paper there are presented the examples of some micro-organisms and spores and pressures killing them. High pressure is not neutral also for enzymes. There are presented the examples of some enzyme resistance for high pressure. There are presented the examples of high pressure use and its effects in the case of some fiúit and vegetable juices. The systems of installation for UHP use for fruit juices preserving in Japan are presented. There are described researches in IBPRS (Institute of Biotechnology) for UHP use in Poland. The pressure 450MPa in 50om C through 20 minutes gave almost the same effect as parallel pasteurisation in 85° C through 20 min. But after 3 months storage the juice preserved with UHP saved the characteristics of fresh juice but pasteurised juice didn't.
