The purpose of the work was to determine the content of fat and cholesterol in the muscle and fat tissues of pure breed pigs — Large White Polish and Duroc and their cross-breeds. The examinations were carried out on three kinds of fat tissue, i.e. periintestinal fat, subperitoneal fat and backfat and the muscle tissue. It was found that cross-breeding influenced a decrease of fat in carcasses and its amount in all the groups of pigs with different contribution of Duroc breed. Besides, it was stated that the content of cholesterol both in the muscle and fat tissues derived from cross-breeds was statistically lower than that in the tissues originated from Large White Polish breed.
