Badania przeprowadzono w dwóch etapach. W pierwszym porównywano mięso normalne (5 prób) i DFD (3 próby) uzyskane od bydła neb o dwukierunkowym użytkowaniu i zbliżonej masie przed ubojem. W drugim oceniano mięso normalne (3 próby) i DFD (5 prób), pochodzące od buhajów mieszańców po czarno-białych krowach użytkowanych dwukierunkowo i buhajach rasy mięsnej bbb. Na pobranych z mięśnia LD próbach mięsa przechowywanych w temp. 0-4°C, po upływie 1, 2, 4, 7, 9, 11 w pierwszym doświadczeniu i 2, 3, 4, 6, 8 i 10 dni składowania w drugim doświadczeniu określano jego skład chemiczny, właściwości fizykochemiczne i sensoryczne. Badania wykazały zmiany procentowej zawartości suchej masy, tłuszczu, białka ogólnego i rozpuszczalnego oraz wzrost wodochłonności mięsa w czasie jego kilkudniowego dojrzewania. Zmiany te były podyktowane głównie ususzką mięsa, ponieważ pH zarówno w klasie mięsa normalnego, jak i DFD utrzymywało się na zbliżonym poziomie przez pierwszych 7-8 dni, a jego niewielki wzrost odnotowano dopiero w końcowym okresie dojrzewania. W analizowanym okresie czasu stwierdzono również polepszenie cech sensorycznych mięsa normalnego oraz mięsa DFD pochodzącego od bydła nizinnego czarno-białego. W przypadku mięsa DFD, pochodzącego od bydła mięsnego bbb, po około 7-dniowym dojrzewaniu odnotowano pogorszenie jego walorów smakowo-zapachowych.

The research consisted of two stages. In the first one, 'normal' meat (5 samples) was compared with DFD meat (3 samples), obtained from the dual purpose Lowland Black-and-White cattle with similar live weight. The other one included an evaluation of'normal' meat (3 samples) and DFD meat (5 samples), coming from crossbreed bulls out of dual purpose Black-and-White cows and by bulls of a beef breed (bbb). Meat samples taken from m. longissimus dorsi, stored at the temperature of 0-4° C, were subjected to analysis after 1, 2, 4, 7, 9 and 11 days in the first experiment, and after 2, 3, 4, 6, 8 and 10 days in the other one. The chemical composition, physical and chemical properties and taste qualities of meat were determined. The research; showed changes in the dry matter, fat, crude protein and soluble protein contents, as well as an increase in the water holding capacity of meat during its ripening. The changes were connected with meat drying, as the pH of both 'normal' and DFD meat remained at a constant level during the first 7-8 days, and its slight increase was noted at the final stage of ripening. The taste qualities of 'normal' meat and DFD meat coming from the Lowland Black-and-White cattle changed for better within the period studied. The taste and aroma qualities of DFD meat obtained from beef cattle (bbb) deteriorated after ca. 7-day ripening.
