Olej rzepakowy należy do najczęściej spożywanych olejów roślinnych w Polsce. W ostatnich latach obserwuje się wzrost zainteresowania olejami tłoczonymi na zimno, dlatego podjęto badania dotyczące aktywności anty rodnikowej oleju rzepakowego tłoczonego na zimno, oraz po poszczególnych etapach rafinacji.

This study attempts to determine the changes in DPPH free radicals scavenging activity of substances found in rapeseed cold pressed oil and in the oils collected after individual phases of refinement. The content of tocopherols and phenolic compounds was determined. Scavenging of DPPH was examined and the coefficient of antiradiacal efficiency (AE) was calculated in order to enable objective assessment of the atioxidant potential. Oils after degumming and neutralization stage had the highest ability to scavenge DPPH. These oils were also characterised by the highest coefficient of antiradical efficiency (AE = 2.43 x 103). The largest quantity of tocopherols and phenolic compounds was found in cold pressed oil. It was confirmed that each next stage of the refinement process caused a decrease in tocopherol and phenolic compounds content.
