The need for the rapid and precise identification methods of food pathogens and spoilage microorganisms requires the elaboration of new techniques of microbial diagnosis. This article presents the newest methods of determining food biocontaminants with particular consideration given to immunological and genetic techniques (genomics) as some of the instrumental techniques (MALDI-TOF-MS, GC-MS, GC-FID) which classify microorganisms in respect to their specific chemical cell constituents, i.e. the fingerprint rule (proteomics, lipomics).
