Oceniono pobranie chromu, niklu i selenu z całodobowymi racjami pokarmowymi osób dorosłych z terenu województwa lubelskiego. Zawartość pierwiastków oceniono metodą obliczeniową z wykorzystaniem programu FOOD oraz analizując próbki racji pokarmowych metodą atomowej spektrometrii absorpcyjnej. Chrom i nikiel oznaczono metodą płomieniową ASA z fazy wodnej, natomiast selen metodą fluorymetryczną po mineralizacji próbek kwasem azotowym (V) i chlorowym (VII).

In 1995 and 1996, eighty three daily rations collected using the duplicate portion technique from forty one adult inhabitants of Lublin province were examined for chromium, nickel and selenium content. Chromium and nickel were determined in water phase by flame atomic absorption spectrometry with background correction. Selenium was determined by fluorimetric method with 2.3-diaminonaphthalene, after wet digestion with nitric and perchloric acids. The daily intakes of chromium, nickel and selenium were also calculated by the „FOOD" software based on the Polish „Tables of trace elements in food products". Average daily chromium, nickel and selenium intake with women's food rations were: 81 µg; 189 µg; 81 µg in 1995, and 64 µg; 151 µg; 72 µg in 1996, respectively. The average level of the studied metals in men's food rations were higher: 111 µg; 247 µg; 104 µg in 1995, and 77 µg; 176 µg; 81 µg in 1996, respectively. The calculated values were lower for chromium and nickel, and higher for selenium than the analytical results. The daily chromium, nickel and selenium intakes were safe and adequate
