Zastosowana w pracy enzymatyczna metoda oznaczania azotanów w piwie jest podobna do zalecanej przez European Brewery Convention. Przebadano tą metodą 54 piwa pochodzące z 19 polskich browarów. Z badań tych wynika, że żadne z analizowanych piw nie przekroczyło ustalonej przez EWG normy dla wody pitnej, która wynosi 50 mg NO3-/l, a tylko 3,7% piw miało wyższe stężenie azotanów od zalecanego poziomu 25 mg NO3-/l Największa ilość azotanów wnoszona jest do piwa przez wodę i chmiel w postaci szyszek chmielowych. Z punktu widzenia sanitarnego, zawartość azotanów w piwie jest bardzo niska w porównaniu do dużych ilości azotanów w warzywach.

Enzymatic assessment of nitrates in polish beers The enzymatic method of nitrate evaluation applied in this study is similar to that recommended by the European Brewery Convention. Fifty four beers produced in ninteen Polish breweries were assayed. The obtained results show that neither of the analysed beers exceeded the limit of 50 mg NO3-/l established by the CEE for a drinking water. Only 3,7% of beers had higher nitrate concentration than the recommended 25 mg NO3-/l level. The main part of nitrates found in beer comes from water and hops in the form of hop cones. From the sanitary points of view, the nitrate concentration in beer is very low as compared to their high levels found in vegetables.
