An in vitro method was used to determine the interaction between starch (alone or in combination with pancreatin) and nitrate or nitrite. The concentrations of NO3- and NO2- were measured using the Griess method. Higher NO3-/NO2- concentrations were found in the buffers containing the substrates of enzymatic starch digestion. Possible mechanisms of nitrate/nitrite interactions have been discussed.
