The content of nitrates and nitrites in green coffee imported to Poland by sea from Peru, Laos, Uganda, Indonesia and Vietnam was determined. The presence of nitrates varied from 25.0-97.2 mg NaNO3/kg, and nitrites - from 0.41-4.15 mg NaNO2/kg. It was proven that coffee roasting process encourages the increase of nitrates and nitrites content and acidity. The lowest increase of examined parameters took place in light and medium roasted coffee, whereas for well roasted coffee the variation in nitrates and nitrites content and acidity remained at the level similar to medium roasted coffee or the content of compounds diminished.
