Wykonano pomiary temperatury trzonów i kapeluszy pieczarek w trakcie ich suszenia w warunkach konwekcji naturalnej. Badania prowadzono w pięciu temperaturach: 41, 51, 60, 70 i 81°C. Wyniki przedstawiono graficznie w postaci wykresów zmian temperatury w funkcji czasu suszenia i zawartości wody suszonego materiału.

To deepen the knowledge on process of convection drying of mushroom the temperatures on surface of stems and caps were measured during drying in a chamber drier at temperatures of drying agent 41, 51, 60, 70, 81 C. Raletive humidity of air drying chamber was simultaneously measured to read the level of wet - bulb temperature. The results are plotted as diagrams of temperature changes versus drying time and moisture content (dry basis) of dried objects. Three phases of temperature changes on mushroom surface were stated. Initial drying period was characterized by rapid temperature rise. The second period was accompanied by slight changes of objects temperature, remainig on wet - bulb temeprature level at drying agent temperatures 60, 70, 81 C, while on much higher than wet - bulb temperature level when drying at lower temperatures. Rapid temperature rise to the temperature of agent in drying chamber was observed in final phase.
