Celem pracy było określenie wpływu temperatury i czasu smażenia frytek na zawartość akrylamidu w gotowym produkcie oraz na jego barwę i konsystencję. Stwierdzono, że zawartość akrylamidu we frytkach z surowca o zawartości cukrów redukujących 0,22%, wahała się od 15 do 567 ppb, w zależności od temperatury smażenia. Obniżenie temperatury smażenia o 15°C (ze 190°C do 175°C) powodowało obniżenie ilości akrylamidu o ponad 30%. Frytki smażone w zakresie temperatur od 130°C do 190°C, charakteryzowały się właściwą barwą. Obniżenie zawartości akrylamidu we frytkach, poprzez zastosowanie niższych temperatur smażenia rzutuje na cechy sensoryczne produktu. Frytki z ziemniaków odmiany Santana zachowały korzystne właściwości (konsystencja) przy zastosowaniu temperatury smażenia 175°C. Frytki smażone w temperaturze 190°C charakteryzowały się najwyższą zawartością akrylamidu.

The purpose of the present study was to determine the time and temperature of French fries frying influence a acrylamide content on ready product, their colour and texture. It was stated that acrylamide content in French fries produced from a raw material of 0.22% reducing sugars content ranged between 15 and 567 ppb, as dependend on frying temperature. As the frying temperature decreased by 15°C (from 190°C to 175°C) the acrylamide content decreased by more than 30%. French fries were characterized by the proper colour if the frying temperature was from 130°C to 190°C. A decreasing of acrylamide content in French fries, by lowering frying temperature, affected the sensory properties of the obtained product. French fries prepared from Santana potato cultivar preserved profitable properties (consistence) in the case when the temperature of 175°C was used. The highest content of acrylamide was characteristic for French fries fried at the temperature of 190°C.
