W kakao naturalnym oraz wybranych produktach typu instant wyprodukowanych na jego bazie oznaczono zawartość wapnia, magnezu, cynku, miedzi, manganu i żelaza. Analizę przeprowadzono za pomocą spektrofotometru absorpcji atomowej, typ SP 192, firmy Pye Unicam.

Calcium, magnesium, zinc, copper, manganese and iron contents of cocoa and some instant cocoa products were determined by atomic absorption spectrometry. The concentrations were: Ca from 1.18 to 2.51 g/kg in cocoa and from 0.25 to 4.04/g/kg in cocoa instant products; Mg 3.81 to 6.88 and 0.84 to 1.94 g/kg; Zn 66.25 to 88.75 mg/kg and 14.38 to 33.13 mg/kg; Cu 37.50 to 60.00 mg/kg and 5.25 to 17.50 mg/kg; Mn 32.13 to 51.25 mg/kg and 6.50 to 17.75 mg/kg; Fe 225.0 to 556.25 mg/kg and 57.50 to 181.25 mg/kg in cocoa and in cocoa instant products, respectively. Zinc and copper content in cocoa instant products were within the limits specified by the revelant Polish regulations; however, the content in cocoa was above the admissible level. Some of the in cocoa instant products were enriched with calcium compounds.
