W pracy określano podatność aminokwasów występujących w postaci jonu obojnaczego i postaci kationu na reakcje z produktami utleniania tłuszczu. Prowadzono badania modelowe w emulsjach estrów metylowych kwasów tłuszczowych: dokozaheksaenowego, linolowego, oleinowego i stearynowego.

For understanding factors which can determined quantitative changes of lysine and methionine, the model studies in emulsions methyl esters of acid fatty (docosahcxaenoic, linoleic, oleic and stearic) were led. Both amino acids were estimated in isoelectric point and at pH lower than isoelectric point. In emulsified systems the lipid oxidation products significant influenced the available lysine and methionine content. TBARS were characterized as more reactive with amino acids than hydroperoxides. The highest decrease of amino acids contents in emulsions of methyl esters of docosahcxaenoic acid were found. The losses of amino acids in others emulsions were lower when less unsaturated of fatty acid was. Influence of lipid oxidation products on available lysine and methionine content was dependent on pH. The highest losses of amino acids in emulsions of methyl docosahexaenoate in pH equal isoelectric point and in emulsions of methyl stearate in pH low than isoelectric point was observed.
