The role of unsaturated fatty acids in animals, especially in pigs, nutrition is discussed. Special attention is paid to unsaturated fatty acids in sow reproduction, in parenchyma development processes in the mammary gland, the effect of feeding them on chemical composition of colostrum and milk, and on the improvement of pork dietary properties. It was shown that the addition of 14% post-refining fats to feed positively affects parenchyma formation in developing mammary gland, and thus improves the piglet perf ormance. It is suggested that the addition of 8 % whole linseeds to diet improves dietary value of pork, reflected in decreased fat content and increases its content of polyene fatty acids, especially those of n-3 group.
