Casein was digested in vitro in different systems. The results of the digestion tests show that nitrates and nitrites inhibit casein digestion. Depending on substrate concentration, the rate of casein digestion was reduced from 7% to 25% for the nitrate (250 to 1000 mg NO3-/dm3) or nitrite (12.5 to 25 mg NO2-/dm3) systems.
