Celem, pracy była ocena zróżnicowania żywienia oraz dynamiki jego zmian w grupach osób o różnym poziomie wykształcenia w okresie 10 lat (1984-1993). W ramach projektu Pol-MONICA Warszawa zbadano w latach 1984, 1988 i 1993 sposób żywienia 2570, 1397 i 1485 mężczyzn i kobiet w wieku 35-64 lat. Stwierdzono istotny wpływ poziomu wykształcenia zarówno na skład racji pokarmowej, jak również i na intensywność dynamiki zmian sposobu żywienia. W 1984 r. najwyższe wskaźniki aterogenności diety zanotowano u osób z wyższym wykształceniem. W ciągu 10 lat osoby te w największym stopniu dostosowały skład racji pokarmowej do poziomu zalecanego w prewencji chorób układu krążenia (ChUK) i w 1993 roku osiągnęły najniższe wartości wskaźnika aterogenności Keysa, a także najbliższy prawidłowym wartościom indeks jakości diety. Rację pokarmową tej grupy cechowała także wyższa zawartość wapnia oraz witamin C i E u obu płci oraz witaminy A u kobiet. Było to odbiciem wyższej konsumpcji produktów mlecznych oraz warzyw i owoców przez osoby o wyższym poziomie wykształcenia w porównaniu z pozostałymi grupami.

The aim of the study was to assess differences in the dietary pattern and their changes during 10 years of observation (1984-1993) in Warsaw population samples, according to educational level. Within the frame of the Pol-MONICA Project, three random samples of male and female Warsaw residents, aged 35-64 were surveyed in 1984, 1988, 1993 (2570, 1397 1485 persons). In a group of participants, categorised according to gender and educational attainment, dietary pattern was assessed. A significant impact of educational level on nutritional habits and on the speed of changes in these habits was found. At the start of observation the atherogenicity of the average diet was highest in persons who graduated from university. Thanks to greater changes in food consumption patterns over 10 years, in 1993 university graduate participants reached the lowest Keys score and the nearest recommended value diet quality index. Intakes of calcium antioxidant vitamins C and E in both sexes and vitamin A in women were consistently higher in groups with university graduates than in other groups. This was due to the higher consumption of dairy products, vegetables and fruits by persons with university education, in relation to the remaining groups.
