General information concerning the activity of the World Organisation for Animal Health OIE was presented. Following this the working program in relation to food safety of animal origin as seen in the OIE was characterized. In connection with this topic a special group was established called the OIE Working Group on Animal Production Food Safety. The role of this group is to coordinate OIE activities concerning animal production food safety and to advise OIE on issues in this area. Acknowledging the importance of animal welfare on the farm and during transportation and the humane approach to killing food animals in the slaughterhouse, an additional group was established and called OIE Animal Welfare Working Group. A definition of animal welfare related to the OIE strategy was formulated. The relationship was stressed between the welfare of animals during the whole production procedure on the farm and the quality of food of animal origin, which is connected with the activity of the OIE Working Group on Animal Production Food Safety. In order to support the activities of the two mentioned working groups the preparation of a OIE - FAO Guide to good farming practices for animal production food safety was announced.
